Blintz Cheesecake for Shavuot

Batter:

½ c. butter

3 Tablespoons sugar

2 eggs

¾ cup milk

1 ¼ cup flour

1 teaspoon baking powder

Filling:

1 pound dry cottage cheese

2 Tablespoon soft butter

1 egg

1 Tablespoon sour cream

1 Tablespoon sugar

Batter: Cream butter and sugar. Add eggs, dry ingredients, then milk. Mix filling ingredients. Grease 8-9’’ square pan well. Put ½ batter on bottom, then filling and top with rest of batter. Bake one hour at 350 degrees.

*If mixed in advance, cover with damp cloth and refrigerate.
